"Mahalep"

Mahalepi or mahallip or malebi (turk.: muhallebi) is called a Cypriot, usually fasting, sweet in the form of rose perfume cream. It contains either maize starch ("island" / cornflower) or rice flour, sugar and rosewater / rose syrup. It is served cold either in the form originally prepared (usually a small glass), or after being chopped. Its taste is neutral and takes a taste of any syrup or other put on top such as some syrup or sugar or sugar or sugar of the spoon. Usually it is fasting, since it is made only with water and starch/ flour, but can also be prepared by adding milk (cypress: "milk masculin". It is usually prepared in the summer months and is considered refreshing. The mahalep is referred to as one of the characteristic sweets in which rosewater is used. The origin of the name, but also of the sweet is from the Middle East/Arabic: Similar sweets (but in several cases with milk) are made in Lebanon, Syria and Turkey, but also Egypt and Morocco under the name Muhallebi (Muhallebi, usually referred to by that name in Turkey), or Muhallabia (Muhallabia, generally in the Middle East) or Michallabiya (Mihallabiya – Egypt).
